Archer’s Leg of Lamb 1 – 1.2k
2 Leeks (white parts trimmed and cut into 3cm chunks)
6 Carrots (peeled and cut into 3cm chunks)
4 Large Potatoes (peeled and cut into 2cm chunks)
4 Sweet Potatoes (peeled and cut into 3cm chunks)
4-8 Garlic Cloves (peeled)
Olive oil
Salt and Pepper
Oregano

Method

Preheat your oven to 200 degrees centigrade.

Place the vegetables into a mixing bowl and add a good glug of oil, salt, pepper and the oregano. With your hands, give a good mix until everything is evenly coated. Tip into your roasting tin and make a well in the centre. Into the centre place the lamb and season with salt and pepper.

Place the whole tin in the centre of your oven for 20 – 25 minutes. Take out and stir the vegetables and place back in for another 35 – 40 minutes. Take out your lamb and rest in a warm place and if needed give your veg another few minutes. As a simple ‘one pot’ dish – all you need is some mint sauce and a gravy if you desire.
